Apple Jam Crepes with Cinnamon

Ingredients for the crepes:

  • 1 cup of wheat flour
  • 2 eggs
  • 1 1/4 cups milk
  • 2 tablespoons melted butter
  • 1 spoon of sugar
  • 1 teaspoon vanilla extract
  • a pinch of salt

Ingredients for the stuffing:

  • Jäppi Cinnamon Apple Jam
  • Powdered sugar for sprinkling (optional)

Instructions:

  1. In a large bowl, mix the flour with the sugar and salt. Add the eggs and mix well.

  2. Gradually add the milk while continuing to mix to avoid lumps. Add the melted butter and vanilla extract, and mix until the dough is smooth and lump-free. Let the dough rest for 15 minutes.

  3. Heat a nonstick frying pan over medium heat and lightly grease it with butter or oil.

  4. Pour some batter into the hot pan and swirl quickly to cover the bottom with a thin, even layer. Cook the crepe for about 1-2 minutes on each side, until golden brown.

  5. Repeat the process with the rest of the dough until you have made all the crepes.

  6. To assemble the crepes, spread a tablespoon of cinnamon apple jam on each crepe and fold it into quarters or roll it up.

  7. Serve the crepes hot, sprinkled with a little icing sugar if you wish.
